We’ve all been there. You’re in between meals, got that pit in your stomach, but don’t want to ruin your next meal by having something too filling. You also want to keep it healthy.
These energy bites will fit the bill.
They’ll leave you satisfied, yet not full feeling. They’ll also give you a burst of energy that you’ll need to get through the rest of your day.
The best part is, they’re super easy to make and can keep for a while in the fridge. Make them ahead of time and bring two with you whenever you go out for the day and you won’t find yourself craving candy or sugary sweets.
I’d even venture to bet that you’ll end up looking forward to this snack and longing for it if you forget to bring them! They’re that good!
Thankfully, these also fit in perfectly to our meal plan! We allow ourselves two a day for a guilt-free pleasure.
For your nut butters, I highly suggest hazelnut and peanut butter. These two nut butters go well solo, or together! We like Teddie peanut butter and have found the best price to be on Amazon. Links below!
Gluten Free Energy Bites!
A satisfying snack for those times when you need a pick me up but don’t want to ruin your dinner!
- 1 cup nut butter (almond, peanut, hazelnut) or you could mix half of 2 different types of nut butters!
- 2 cups rolled outs not instant – the old fashioned kind!
- 4 Tablespoons solid coconut oil
- 2 Tablespoons honey local preferred
- 4 Tablespoons ground flaxseed
- 1 Teaspoon coarse seasalt
Combine nut butter, coconut oil, honey, ground flaxseed, and salt in large bowl.
Once blended well, fold in rolled oats until combined evenly.
Using your hands, create golf ball sized balls. Put on a single layer plate for refrigeration.
Refrigerate for approximately 20 minutes, or until they are firm and no longer “wet.”
Transfer to a container or bag with lid and store for up to 7 days in refrigerator! Enjoy!
