My boys love to challenge me. They’ll often ask what’s for dessert, knowing very well that I have nothing prepared. Since we do not buy desserts very often, I am usually left trying to use my imagination and basic culinary skills.

Last night was no exception! But the bad part was, we really HAVE NOT bought any “junk” food recently. The only things I had at my disposal were peanut butter, bananas, and coconut milk “cool whip” aka Cocowhip! We discovered Cocowhip a bit ago when we were looking to make a dairy free trifle. If you haven’t tried it, give it a shot! We actually prefer it over the dairy stuff nowadays.

So, the general idea for this recipe is simple. You need a blender, 2 bananas, 1/2 cup of peanut butter, and approximately 1 cup of Cocowhip. Blend the bananas and peanut butter until smooth. Fold the CocoWhip into the blended peanut butter & bananas and serve.

As an added treat and for overall presentation, you can serve this with a cookie dipped into it. You could also serve it with a touch of whipped cream. We have recently discovered a dairy free whipped made with almond milk! Superb!

3 Ingredient Banana Smoothie Bowl

Easy, quick and “somewhat” healthy….

Ingredients

  • 2 peeled bananas
  • 1/2 Cup Smooth Peanut Butter
  • 1 Cup Cool Whip or CocoWhip

Instructions

  1. Blend Bananas and Peanut Butter until smooth.

  2. Fold in Cool Whip/CocoWhip until blended.

  3. Serve as is, or top with your favorite cookie.

Recipe Notes

Due to the nature of bananas, this should be served immediately.
